Walnut Mushroom Sausage

Servings: 2 cups

Insanely Good! This sausage is made of walnuts and mushrooms- so it’s full of anti-cancer nutrients, healthy omega 3 fatty acids, fiber, plant protein and more.

Ingredients

  • 1 cup walnuts
  • 1 8 oz. pack sliced mushrooms
  • 3 Tbsp unbleached flour
  • 1 tsp dried basil
  • ½ tsp oregano
  • 1 tsp fennel seeds, crushed
  • 1 tsp sea salt
  • ½ tsp. smoked paprika (or less)
  • 1 Tbsp maple syrup
  • pinch of crushed red pepper

Instructions

  • Place walnuts in food processor and pulse to a rough crumble.
  • Add mushrooms, flour, basil, fennel, pinch of red pepper, salt, and maple syrup.
  • Pulse about 4-5 times, until mushrooms are chunky chopped. DO NOT OVER PROCESS.
  • Place the mixture in a large sauté pan with some fat free cooking spray. Turn frequently with the spatula, breaking up into smaller pieces as both sides begin to brown. and crisp (about 10-15 minutes)

If you double the recipe, process one recipe at a time so as to keep a consistent texture.
