Caribbean Beans and Rice

Ingredients

  • 1 onion, chopped
  • ½ cup celery, chopped
  • 1 Tbsp chopped parsley
  • 1 clove garlic, chopped
  • 2 Tbsp butter
  • 2 cups rice, cooked
  • 1 16 oz. can kidney beans
  • 1/8 tsp pepper
  • 1/4 tsp salt

Instructions

  • Cook onion, celery, and garlic in butter until tender.
  • Add remaining ingredients
  • Simmer together for 5 minutes to blend flavors.
