Spinach Pesto

Spinach Pesto

(Makes about 4 cups, can be frozen)

Ingredients

  • 1 pound spinach, cleaned
  • 10 garlic cloves, peeled
  • ¾ cup dried basil
  • 1 cup olive oil
  • 1 ½ cups soaked almonds (raw)
  • 3 Tbsp lemon juice
  • 1 Tbsp sugar
  • 2 tsp sea salt
  • ¾ cup Parmesan cheese
  • pepper

Instructions

  • Put half of the spinach, garlic, basil, and a bit of the oil into a food processor; process
  • Add remaining ingredients (except spinach); process
  • Slowly add the rest of the spinach; process
