Spinach Pesto
Spinach Pesto
(Makes about 4 cups, can be frozen)
Ingredients
- 1 pound spinach, cleaned
- 10 garlic cloves, peeled
- ¾ cup dried basil
- 1 cup olive oil
- 1 ½ cups soaked almonds (raw)
- 3 Tbsp lemon juice
- 1 Tbsp sugar
- 2 tsp sea salt
- ¾ cup Parmesan cheese
- pepper
Instructions
- Put half of the spinach, garlic, basil, and a bit of the oil into a food processor; process
- Add remaining ingredients (except spinach); process
- Slowly add the rest of the spinach; process
