Easy Cheesy Scalloped Potatoes

Ingredients

  • 3 lbs. Yukon gold potatoes
  • 1 medium onion, diced
  • 1 cube butter
  • 2½ tsp salt
  • 1 tsp pepper
  • ½ tsp garlic powder
  • 1/3 cup flour
  • 4 cups milk, (almond)
  • 2 cups grated cheese + some for topping
  • paprika

Instructions

  • Preheat oven to 350 degrees.
  • Scrub potatoes. Slice unpeeled potatoes into ⅛-inch.
  • Place butter in a medium-sized saucepan over medium heat. Once butter has melted whisk in salt, pepper, garlic powder, and flour.
  • Once a thick paste has formed start adding in milk ½ cup at a time. Whisk until sauce begins to thicken before adding the next addition.
  • When all milk has been used and sauce is a gravy consistency, turn off the heat and stir in cheese.
  • Layer half of the potatoes in the pan, then half of the onion and half of the cheese sauce. Repeat these layers.
  • Spread cheese on top and sprinkle with paprika. Cover dish with aluminum foil giving space so it doesn’t touch the cheese. Bake for 50 minutes at 350.
  • Remove aluminum foil and bake for 10-15 more minutes.
  • Let potatoes sit for at least 10 minutes before servings.
