German Potato Salad

Ingredients

  • 2 medium onions, chopped
  • 1 Tbsp mustard
  • 8 Tbsp apple cider vinegar
  • 1 heaping tsp palm sugar
  • 1½ tsp salt
  • 1 tsp celery salt
  • ½ tsp black pepper
  • ½ cup olive oil
  • 2 bundles parsley (or dried parsley flakes)
  • 4-5 large potatoes

Instructions

  • Slice peeled potatoes into ¼ inch slices. Cook until firm tender.
  • Bring 1 cup water to boil in a pan. Add: onion chunks, mustard, vinegar, sugar, salt, celery salt, and black pepper and boil for 1 minute.
  • Remove the pan from the heat and add the oil and parsley.
  • Pour the hot sauce over the sliced boiled potatoes, cover tightly, and let it marinade for at least 10 minutes.
  • Can be served warm or cold.
  • Hint: Put it into a Tupperware dish with lid and turn it over a few times carefully.
