German Potato Salad
Ingredients
- 2 medium onions, chopped
- 1 Tbsp mustard
- 8 Tbsp apple cider vinegar
- 1 heaping tsp palm sugar
- 1½ tsp salt
- 1 tsp celery salt
- ½ tsp black pepper
- ½ cup olive oil
- 2 bundles parsley (or dried parsley flakes)
- 4-5 large potatoes
Instructions
- Slice peeled potatoes into ¼ inch slices. Cook until firm tender.
- Bring 1 cup water to boil in a pan. Add: onion chunks, mustard, vinegar, sugar, salt, celery salt, and black pepper and boil for 1 minute.
- Remove the pan from the heat and add the oil and parsley.
- Pour the hot sauce over the sliced boiled potatoes, cover tightly, and let it marinade for at least 10 minutes.
- Can be served warm or cold.
- Hint: Put it into a Tupperware dish with lid and turn it over a few times carefully.
