Sharp Cheddar Cashew Cheese Spread

Servings: 2 lbs.

Ingredients

  • 4 cups raw cashews,
  • (soaked in water 3 to 8 hours. Drained and rinsed.)
  • 2/3 cup nutritional yeast flakes
  • 1 cup rejuvelac
  • 3 Tbsp medium brown miso
  • 2 tsp salt

Instructions

  • Blend all ingredients in a high-powered blender until very smooth.
  • Transfer the mixture to a clean glass bowl, cover and let rest at room temperature for 24 to 72 hours, depending on how sharp a flavor you want.
  • This will last 4 months in the refrigerator and will freeze well.
