Elaine’s Crockpot Bean Soup

ELAINE’S CROCKPOT CHILI (modified)

Ingredients

  • 2 lb. or 4 1/2 cups dried pinto beans, picked over and rinsed, and soaked overnight

  • 6 cans chicken broth
  • 2 onion, finely chopped
  • 4 carrots, peeled and chopped
  • 2 tsp salt
  • 1 tsp oregano
  • 1 tsp chili powder
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 2 tsp liquid smoke (opt.)

  • 1 lb. turkey sausage (ground) – NO MORE or it is too meaty
  • 1 1/2 cups ketchup

Instructions

  • The night before cooking, wash beans and cover with water and allow them to soak overnight
  • The next morning drain the beans and rinse them well
  • Put beans, broth, onions, carrots and spices in a crockpot
  • Cook on high for 5 or 6 hours until the beans split, (or on low for 8 hours)
  • Fry the sausage until very well done and slightly crispy
  • Add fried sausage and ketchup to beans and continue to simmer on low
