Elaine’s Crockpot Bean Soup
ELAINE’S CROCKPOT CHILI (modified)
Ingredients
- 2 lb. or 4 1/2 cups dried pinto beans, picked over and rinsed, and soaked overnight

- 6 cans chicken broth
- 2 onion, finely chopped
- 4 carrots, peeled and chopped
- 2 tsp salt
- 1 tsp oregano
- 1 tsp chili powder
- 1 tsp pepper
- 1 tsp garlic powder
- 2 tsp liquid smoke (opt.)

- 1 lb. turkey sausage (ground) – NO MORE or it is too meaty
- 1 1/2 cups ketchup
Instructions
- The night before cooking, wash beans and cover with water and allow them to soak overnight
- The next morning drain the beans and rinse them well
- Put beans, broth, onions, carrots and spices in a crockpot
- Cook on high for 5 or 6 hours until the beans split, (or on low for 8 hours)
- Fry the sausage until very well done and slightly crispy
- Add fried sausage and ketchup to beans and continue to simmer on low
