Healthy Granola

Ingredients

    Mix dry ingredients:
  • 11 cups oatmeal
  • 2 cups coconut (raw, unsweetened, shredded)
  • 2 cups wheat germ
  • 2 cups chopped nuts of any kind
  • 2/3 cup flax seed (ground into flour)
  • 1/3 cup organic brown sesame seeds
  • 2 Tbsp cinnamon
    Mix wet ingredients (until honey and coconut oil dissolve):
  • 1 cup water (heated just until boiling)
  • 1 1/3 cups honey
  • 1 cup coconut oil
  • 1/2 tsp salt
  • 1/4 cup coconut palm sugar
    Add:
  • 4 tsp vanilla

Instructions

  • Spread on large cookie sheets
  • Bake at 255 for 80 minutes.
  • Place both pans in oven on two different racks
  • Alternating positions every 20 minutes.
  • Check it to make sure it isn’t burning on top.
  • Allow to cool completely before removing from pans.
  • Place in covered container
  • Can be frozen

One batch fits on two large cookie sheets.
