Zuppa Toscana Soup

Ingredients
- 4 lb. Italian turkey sausage (2 spicy 2 regular)
- 1 cube butter
- 2 large white onions, diced
- 3 TBSP minced garlic
- 5 quarts chicken broth
- 8 lbs. yellow potatoes, cut into 3/8” slices (unpeeled)
- 1 TBSP salt
- 1 TBSP black pepper
- 12 cups chopped kale
- 8 cups plant based heavy cream (cashew cream)
Instructions
- In a large pot sauté sausage 5-6 minutes until browned. Remove sausage from pan.
- In the same pot, add butter and sauté onions over medium heat until translucent.
- Add garlic and sauté for another minute until fragrant.
- Add chicken broth, potatoes, salt, and pepper. Boil until potatoes are tender.
- Stir in kale. Cook until desired tenderness
- Add heavy cream and sausage.
- Do not boil
