Black Bean Chocolate Brownie Cookies

Servings: 4 dozen

You’ll never believe that they’re made with black beans!

Ingredients

  • 3 cans black beans, rinsed well
  • 6 Tbsp milk
  • ¼ cup peanut butter
  • 6 Tbsp olive oil
  • ½ cup + 1 Tbsp whole wheat flour
  • ½ cup cacao powder
  • 1 ½ cup + 3 Tbsp sugar
  • 1 Tbsp baking powder
  • 1 Tbsp vanilla extract
  • dash of cinnamon
  • dash of salt
  • 1 ½ cup chopped walnut
  • 1 cup dark / milk chocolate chips, (plus more for sprinkling on top)

Instructions

  • Preheat oven to 375 and line a large baking sheet with parchment paper.
  • Combine black beans, milk, peanut butter, vanilla and olive oil in a food processor and process until smooth.
  • Transfer to mixer bowl.
  • Combine dry ingredients
  • Add to bean mixture and beat until combined and mousse-like.
  • Stir in chocolate chips and nuts.
  • Spoon dollops evenly spaced dollops of the batter onto the baking sheet and sprinkle with the extra chocolate
  • chips. Flatten slightly.
  • Bake for 10 minutes.
  • Let cool slightly, then put on a baking rack until they are cooled completely.

STORE IN THE REFRIGERATOR DUE TO THE BLACK B EANS!

Can be frozen. Thaw at room temperature
