Black Bean Chocolate Brownie Cookies
You’ll never believe that they’re made with black beans!
Ingredients
- 3 cans black beans, rinsed well
- 6 Tbsp milk
- ¼ cup peanut butter
- 6 Tbsp olive oil
- ½ cup + 1 Tbsp whole wheat flour
- ½ cup cacao powder
- 1 ½ cup + 3 Tbsp sugar
- 1 Tbsp baking powder
- 1 Tbsp vanilla extract
- dash of cinnamon
- dash of salt
- 1 ½ cup chopped walnut
- 1 cup dark / milk chocolate chips, (plus more for sprinkling on top)
Instructions
- Preheat oven to 375 and line a large baking sheet with parchment paper.
- Combine black beans, milk, peanut butter, vanilla and olive oil in a food processor and process until smooth.
- Transfer to mixer bowl.
- Combine dry ingredients
- Add to bean mixture and beat until combined and mousse-like.
- Stir in chocolate chips and nuts.
- Spoon dollops evenly spaced dollops of the batter onto the baking sheet and sprinkle with the extra chocolate
- chips. Flatten slightly.
- Bake for 10 minutes.
- Let cool slightly, then put on a baking rack until they are cooled completely.
STORE IN THE REFRIGERATOR DUE TO THE BLACK B EANS!
Can be frozen. Thaw at room temperature
