Candied Almonds
Soak and dehydrate:
10 cups raw almonds
(Soak in water 8 – 10 hours, drain, rinse, and dehydrated at 105° approx. 6 hours)
Blend in high-powered until smooth:
¾ (slightly rounded) cup chopped dates,
(soaked and drained)
2 tsp pumpkin pie spice
½ cup water
2/3 cup maple syrup
½ – ¾ tsp sea salt
1 ¼ tsp butterscotch or rum flavoring
Directions:
1. Pour into a bowl, add the almonds, and stir well.
2. Let the mixture sit for an hour to allow the nuts to absorb the liquid, then stir again.
3. Spread the nuts on Teflex sheets in a dehydrator.
4. Dry at 105° for about 16 hours.
5. Place the nuts on mesh sheets and dry again until crunchy (about 10 hours).
