Creamy Dijon Vinaigrette
CREAMY DIJON VINAIGRETTE
Ingredients
- 1/3 cup red wine vinegar (good quality)
- 2 Tbsp mayonnaise
- 1 1/3 cup olive oil (separate into a 1 cup portion and a 1/3 cup portion)
- 1 1/2 Tbsp regular mustard
- 1/2 Tbsp honey
- 1 tsp sea salt
- 2 cloves garlic
- ½ tsp onion powder
- 1 tsp oregano
- 1 tsp basil
- black pepper (20 grinds)
Instructions
- Reserve 1 cup of olive oil to be slowly added later.
- Blend everything else in a high-speed blender.
- Blend for 30 seconds on a #2 speed.
- Reduce speed to #1.
- Slowly pour the reserved cup of olive oil in a pencil lead stream.
- This should take about 30 seconds.
