Blue Cheese Vinaigrette

Ingredients
- 2 large cloves garlic
- 1 tsp dried oregano
- 1 Tbsp palm sugar
- 6 Tbsp red wine vinegar
- ¾ cup olive oil
- 6 ounces blue cheese crumbles
- pepper to taste
- (Do not add salt, the cheese is salty enough)
Instructions
- Combine garlic, oregano, sugar, vinegar and ¼ cup of the olive oil in blender and blend well.
- Add the rest of the oil to the dressing in a slow stream while blending on low.
- Add blue cheese and blend just until big clumps are broken down.
