Blue Cheese Vinaigrette

Ingredients

  • 2 large cloves garlic
  • 1 tsp dried oregano
  • 1 Tbsp palm sugar
  • 6 Tbsp red wine vinegar
  • ¾ cup olive oil
  • 6 ounces blue cheese crumbles
  • pepper to taste
  • (Do not add salt, the cheese is salty enough)

Instructions

  • Combine garlic, oregano, sugar, vinegar and ¼ cup of the olive oil in blender and blend well.
  • Add the rest of the oil to the dressing in a slow stream while blending on low.
  • Add blue cheese and blend just until big clumps are broken down.
