Whole Wheat Bread
Ingredients
- 6 2/3 cup hot water (hot as tap will run)
- 1/3 cup honey
- 1/3 cup applesauce (3 cubes)
- 4 tsp sea salt
- 8 cups of the 16 cups whole wheat flour needed for the recipe
- ½ cup gluten
- 1 Tbsp yeast – on top of flour (less yeast works, it just raises slower)
Instructions
- Mix slowly adding the remaining flour, add flour until dough pulls away from sides of bowl.
- Knead on low (#2) for 6 minutes.
- Oil surface, divide into 4 equal loaves. (Weigh the dough)
- Put into oiled bread tins.
- Let rise until double. (30 to 60 minutes)
- Preheat oven to 400 degrees.
- Place bread into oven and drop the heat to 335.
- Bake for 25 to 30 minutes, or until an internal temperature of 180 is reached.
- Remove from pans and place on wire rack to cool.
Hard White Wheat makes a lighter flour than Hard Red Wheat.
