Whole Wheat Bread

Servings: 4 loaves

Ingredients

  • 6 2/3 cup hot water (hot as tap will run)
  • 1/3 cup honey
  • 1/3 cup applesauce (3 cubes)
  • 4 tsp sea salt
  • 8 cups of the 16 cups whole wheat flour needed for the recipe
  • ½ cup gluten
  • 1 Tbsp yeast – on top of flour (less yeast works, it just raises slower)

Instructions

  • Mix slowly adding the remaining flour, add flour until dough pulls away from sides of bowl.
  • Knead on low (#2) for 6 minutes.
  • Oil surface, divide into 4 equal loaves. (Weigh the dough)
  • Put into oiled bread tins.
  • Let rise until double. (30 to 60 minutes)
  • Preheat oven to 400 degrees.
  • Place bread into oven and drop the heat to 335.
  • Bake for 25 to 30 minutes, or until an internal temperature of 180 is reached.
  • Remove from pans and place on wire rack to cool.

Hard White Wheat makes a lighter flour than Hard Red Wheat.
