Healthy Whole Wheat Waffles
Ingredients
- 4 1/4 cups almond milk
- 3 Tbsp vinegar (let sit for 10 minutes)
Mix:
- 4 cups loosely packed whole-wheat flour
- 5 tsp baking powder
- ¼ cup ground flax meal (or 1/3 cup almond meal)
- ¼ cup cane sugar
- 1 tsp cinnamon
- ½ tsp sea salt
Combine:
- almond milk mixture
- 1/2 cup melted coconut oil
- 1 tsp vanilla
Mix:
Instructions
- Mix vinegar with almond milk and allow it to sit for 10 minutes.
- Preheat your waffle iron (I use setting #4 on mine)
- Combine dry ingredients.
- Whisk melted coconut oil and vanilla into the milk mixture
- Then pour your wet ingredients into the dry ingredients.
- Mix until just combined – don’t over mix. (THE BATTER WILL BE VERY THICK.)
- Spray your waffle iron with a little cooking spray and scoop in heaping 2/3 cup batter.
- Lightly spread it around the waffle iron.
- Cook as usual.
- Cool and freeze for later.
