Healthy Whole Wheat Waffles

Servings: 8 waffles

Ingredients

    Mix:
  • 4 1/4 cups almond milk
  • 3 Tbsp vinegar (let sit for 10 minutes)
    Combine:
  • 4 cups loosely packed whole-wheat flour
  • 5 tsp baking powder
  • ¼ cup ground flax meal (or 1/3 cup almond meal)
  • ¼ cup cane sugar
  • 1 tsp cinnamon
  • ½ tsp sea salt
    Mix:
  • almond milk mixture
  • 1/2 cup melted coconut oil
  • 1 tsp vanilla

Instructions

  • Mix vinegar with almond milk and allow it to sit for 10 minutes.
  • Preheat your waffle iron (I use setting #4 on mine)
  • Combine dry ingredients.
  • Whisk melted coconut oil and vanilla into the milk mixture
  • Then pour your wet ingredients into the dry ingredients.
  • Mix until just combined – don’t over mix. (THE BATTER WILL BE VERY THICK.)
  • Spray your waffle iron with a little cooking spray and scoop in heaping 2/3 cup batter.
  • Lightly spread it around the waffle iron.
  • Cook as usual.
  • Cool and freeze for later.
